1 cup kale, thinly sliced into bite-sized pieces
1/4 cup dates
1 medium red apple, diced (favorite variety)
2 tablespoons sliced almonds
2 tablespoons grated Mozzarella cheese
3 tablespoons lemon juice
2 tablespoons olive oil
Pinch of salt to taste
- Whisk together lemon juice, olive oil and salt in a small bowl. Set dressing aside to combine flavors.
- Add kale, dates, apple, almonds and cheese to a large serving bowl and mix together gently.
- Top kale mixture with dressing and serve cold.
Recipe makes three, one cup servings. Each serving contains:
